Opinion: Activists don’t understand the science of mountain lion hunting and management

Published Sun, 23 Feb 2025 23:15:04 GMT

Are you smarter about ecosystems than a wildlife specialist with a biology degree and 25 years of experience in the field? How about an entire leadership team with nine science degrees and a combined two hundred years’ worth of professional experience? How about an entire agency of such experts overseen by commissioners appointed by the governor for their varied experience, education, and regional expertise? What are you willing to bet? Most of us have enough self-awareness to refuse that wager but not a group of activists that is willing to gamble the health and vitality of Colorado’s ecology. Published Sun, 23 Feb 2025 23:15:04 GMT

Celeriac — or celery root — is a gentle way to usher in fall without going full pedal to the metal with pumpkin-spiced everything. Its subtle celery flavor pairs beautifully with tangy green apple and walnuts, which puree into a creamy, but creamless soup perfect for chillier weather. Cozy up on the couch with a favorite book and blanket and enjoy this warm bowl of comfort in your lap. (For any curious readers, my picks were “Old Man and the Sea” and my mom’s homemade “Fall Leaves” quilt.)If you find celery root with stems and leaves intact, save the leaves for the garnish, or use the leaves from a standard bunch of celery. No thyme? Sage works well, as do fresh chives or parsley.Celeriac and Green Apple Soup with Toasted WalnutsServes 6 to 8INGREDIENTS3 tablespoons olive oil1 large yellow onion, chopped1½ pounds celery root, skin sliced away and chopped (about 3 roots)1 green apple, peeled and chopped2 cloves garlic, chopped¼ cup vermouth (or sherry wine)6 c...
